Willi Schaefer is a small 4.8-hectare, Riesling-only VDP family estate in Graach whose defining sites are Graacher Domprobst and Graacher Himmelreich.

The estate builds most of its Rieslings around residual sugar balanced by cutting acidity. That’s a useful house signature, but every bottle still demands its own Prädikat, vintage and AP number check before you draw conclusions.

The VDP lists Graacher Himmelreich, Graacher Domprobst and Wehlener Sonnenuhr as Grosse Lage sites. Domprobst and Himmelreich offer the clearest producer-controlled comparison, since both sit in Graach and recur throughout the range.

A vineyard name is an origin claim, not a flavor guarantee. Aspect, elevation, water supply and soil shape growing conditions — but vintage, picking decisions, fermentation, residual sugar and bottle age all leave their mark too.

Treat site descriptions as a framework for comparison, not as proof that slate passes directly into the glass.

  2. Then choose origin. Regional, village and single-vineyard wines answer different questions — they aren’t interchangeable price tiers.
  3. Check the exact vintage and AP number. These identify the harvest and approved bottling; don’t transfer one review to another wine with a similar label.
  4. For older bottles, buy provenance. Storage, fill level, closure and seller reputation matter far more than a generic aging promise.
